• Floor Maltings at Thomas Fawcett & Sons

Some malt is still made the traditional way, germination of malted barley is controlled by hand to convert the starch to maltose on the malting room floor before being kiln dried ready for shipment to the brewery.

  • The Malt Bill

Once at the brewery, the Malt bill is prepared for each beer and transferred via the grist hopper and auger into the Mash Tun.

  • The Mash Tun

Mashing in, the malt is hydrated with our now heated hot spring water to create a wonderfully smelling mix where we can extract a great amount of sugary wort ready for the copper and yeast further down the line.

  • The Copper

Transferring of the wort from the mash tun into our Brewing vessel ready for the boil and then Hops.

  • The Hops

Hops are added to the boil initially for bitterness and in the latter stages for aroma, our favourite bit because we get to put loads in.

  • The Fermentation

Now the important bit, the world of yeast as millions of cells start their work converting the complex sugars and amino acids towards our final product, we’re getting near to beer now.

Fine Hops and Spring Water

All our beers are characterised by the natural spring water pumped directly into the brewery from our own bore hole just 51 metres below our feet. The hops range from the traditional british varieties to the new world hops, the very best we can get at any time, our water never changes and creates the smooth light texture immediately recognisable in every Small World Beer.
All our beers are made from the finest ingredients, Maris Otter malt from West Yorkshire’s maltsters Thomas Fawcett & Sons, the best hops grown here in the UK and beyond, our yeast and of course our Barncliffe water.
